Astrophysical accelerators bombard the Earth with single particles with 
energies up to 3*10^{20} electron volts (roughly equivalent to a 
well-hit tennis ball).  These energies are far beyond those available at 
any terrestrial accelerator laboratories.  In this talk, I will discuss 
some of the particle and nuclear physics that we can study using these 
beams of natural particles.  I will focus on measurements of proton and 
neutrino cross-sections at ultra-high energies, and on the physics that 
can be studied in particle showers that these interactions produce.
