The isolation of graphene and other one-atom thick layers has made it possible for the first time not only to access the electronic properties of almost ideal 2D systems, but also to manipulate and tune them.  In this talk I will describe scanning tunneling microscopy and Landau level spectroscopy measurements on graphene layers with emphasis on three results a) tuning the band structure in twisted graphene layers. b)  tuning screening by populating Landau levels c) Kondo screening of single   vacancies.
